Let me tell you from the start, this beer mug cake tastes AMAZING! Once I came up with this recipe people were doubting and wondering, but as soon as they tasted it, the moistness with beer flavor, everyone wanted it. Friends asked me to make it for their birthdays and my brother, who already tasted plenty of my cakes, confirmed it to be the best cake he ever tasted from my creations.

Beer flavor in a cake is actually pretty amazing, as it combines the sweetness of the cake with a pleasant hint of bitterness of the beer. Beer also makes it a super moist delicious cake! The beer cake recipe can be made with your favorite beer, let it be guinness, corona, black beer, heineken, bud light or dark beer. I personally recommend choosing a beer with a nice strong taste, to still have the taste of beer in the cake, as through the baking process a lot of the alcohol evaporates and with it also the beer taste. But what is left gives this unique hint of beer flavor in the cake and it combines very well with the sweetness.

As said, this beer mug cake is definitely a perfect gift to surprise someone. Especially for beer lovers, for men, for a birthday or for father’s day. The best surprise of this cake is not only how extraordinary it looks like, a huge beer mug cake, but that it also tastes like beer. Twice as nice! How to make a Beer Cake – Tutorial

I’ll show you how to make this DIY beer cake, which looks like a beer mug! It is fairly simple!

  • Beer cake batter: the beer cake recipe is really simple. First mixing together the eggs with sugar and salt, and then adding the remaining ingredients in portions. Half of the the dry ingredients, oil and beer. As a nice touch I like to add a bit of melted white chocolate to the dough.
  • Baking in the oven: when making the beer cake batter you probably notice that it is a rich and heavy dough, which ends up as a delicious moist beer cake. To get this moistness, it is important to bake on low heat in the oven, to not get dry edges or similar.

DIY Cake Design Ideas

  • Frosting: in case you want to have a casual beer cake, just cover it with melted white chocolate. If you go for the beer mug cake version, you make the frosting and put aside ¼ of it to save for the beer foam. The remaining frosting is colored in yellow with just a tiny splash of brown to make it this dark yellow beer color. Read on below in the recipe!
  • Decoration: the yellow and white frosting almost already make up the entire beer mug. Only the beer handle is left, which is simply rolled from white fondant and sticking it into the cake with long wooden sticks.

Beer Mug Cake

Ingredients

Beer Cake Batter

  • 7 eggs
  • 1 2/3 cup (380g) granulated sugar
  • 1/2 cup (100g) white chocolate
  • 4 cup (480g) flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1 1/4 cup (300ml) beer of your choice , strong in taste
  • 1 cup 1 tbsp (260ml) oil

Cream Cheese Frosting

  • 2 1/2 cups (300g) cream cheese, (room temperature)
  • 1/3 cup (75g) butter, (room temperature)
  • 1/3 cup (50g) powdered sugar
  • 1 tbsp lemon juice

Swiss Meringue Buttercream

  • 1/2 cup (120g) egg whites
  • 1 cup (190g) sugar
  • 1 pinch salt
  • 1 1/2 cups (350g) butter, (room temperature)
  • yellow & brown food coloring
  • white fondant
  • wooden sticks

Instructions

Beer Cake Batter

    1. Whisk the eggs just until fluffy and while continuing to mix, add the sugar bit by bit.
    2. Carefully melt the chocolate and add to the egg mixture.
    3. Mix flour, baking powder and salt and gently add half to the mixture. Add half of the beer and oil and repeat the entire process.
    4. The perfect consistency of the dough: runny. Pour the dough into 3 cake pans with a 6 inch (15 cm) diameter, which are laid out with parchment paper and bake for 30-40 minutes at 320°F (160°C). Check with a toothpick if well baked, but it should still be soft and not dry. Let completely cool down and then take it out from the cake pans.

Cream Cheese Frosting + Decoration

  • Add all ingredients (room temperature) to a bowl and whisk only until smooth. Spread the cream cheese frosting on the each cake layer and stack. For stacking it is recommended to use and stack in a tall cake ring, then refrigerate the cake for several hours.

Swiss Meringue Buttercream

    1. In a fat-free bowl (wipe out the bowl and whisk with vinegar) add the egg whites, sugar and salt. Place over a saucepan, which is half filled with boiling water. Let the bowl be warmed by it and continuously whisk the egg whites until all the sugar dissolves and you cannot feel any sugar crystals between your fingers, it should have a frothy texture. Whip the egg whites on high speed with a standing mixer until it is room temperature and perfectly whipped meringue. This can take up to 10 minutes, I’m sometimes putting cool packs on the sides of the bowl to shorten the cool down time. Once it is at room temperature add the butter spoon by spoon. To obtain a perfectly smooth buttercream, take out a quarter of the buttercream and heat it up until it slighlty melts, add back to the batch and whip with a stirring hook 5-10 minutes on low speed. Before using it, let it come down to room temperature. Stir it with a whisk and it’s ready to use.
    2. Put aside ¼ of the frosting.
    3. Add yellow and just a tiny bit of brown food coloring to obtain the perfect beer color. Cover the entire cake with the yellow buttercream. With a spoon make those notches as of a beer mug.
    4. Spread the white buttercream on top with a piping bag and round nozzle in style of beer foam.
    5. Role the white fondant to a pole and form to a handle. Stick in the toothpicks on each end and stick into the cake.
