Absinthe is an anise-flavoured spirit made from botanicals, including Artemisia absinthium (grand wormwood) and other botanicals such as green anise, sweet fennel and other herbs. Absinthe, although some can be colourless, is usually a natural green colour and commonly referred to in historical literature as ‘la fée verte (the green fairy).

Absinthe ordinated in Switzerland in the late 18th Century and rose to great popularity in the late 19th and early 20th Century in France, particularly among artists and writers. The consumption of Absinthe was opposed by social conservatives and prohibitionists of the time partly due to the association of the drink with Bohemian culture. Absinthe has often been seen was a dangerously addictive and psychoactive hallucinogen. Thujone, the chemical compound, was blamed for its harmful effects, which led to Absinthe being banned in the United States and in much of Europe, including France, the Netherlands, Belgium, Switzerland and Austria-Hungary…although it’s never been demonstrated to be any more dangerous than ordinary spirits. A revival of Absinthe began in the 1990’s.
